Italian Pasta & Beans Recipe
This hardly authentic pasta and beans recipe is a must-try, It's delicious, simple, and inexpensive to make.
As the carefree days of summer come to an end, cooler weather starts creeping in and the sun is setting a little earlier each night, It is time to incorporate warm hearty meals into your menu. Beans and Greens ( pasta and beans ) is a traditional Italian dish and a family favorite of mine. Don’t be fooled by the simplicity of this dish because it is delicious. These types of dishes were intended to feed the most amount of people, in the least expensive way, and still be tasty.
What are great northern beans? Great northern beans are white kidney-shaped beans and are very versatile. They are available dry and canned. They can be used in soups, stews, salads, and more. Great northern beans are an excellent source of fiber and are packed with protein. One cup of great northern beans has 39 grams of protein.
The Recipe
This Beans and Greens dish is not only nutritious ( I promise you won’t know you are eating spinach ) it's delicious, filling, extremely inexpensive and so simple to make. You can serve it with a hot loaf of homemade bread. I have a simple recipe for homemade bread with only one knead linked below. If you don’t want to make your own bread you can buy a loaf of non-sliced Italian bread wrap it in foil and warm it in the oven at 325 degrees for 10 mins. Be sure to top your soup with parmesan cheese. The cheese finishes off this dish wonderfully.
What you’ll need:
1/4 cup of olive oil
4 cloves of garlic
1 chicken bouillon cube
2-10oz cans of diced tomatoes
2-10oz cans of great northern beans
1-14oz can of spinach chopped
1 cup of ditalini pasta
1 cup of your pasta water
You can substitute ditalini pasta with elbow pasta and great northern beans with cannellini beans.
Cook pasta in a seprate pan.
Step 1 Saute garlic in olive oil until slightly cooked.
Step 2 Add chicken bouillon cube and undrained spinach saute for 4-5 minutes.
Step 3 Add beans and tomatoes and cook for 30 minutes on medium to low heat.
Step 4 Cook pasta in a separate pan. When the pasta is almost done add 1 cup of pasta water to the bean, and spinach mixture.
Step 5 Add 1 cup of pasta.
