Cinnamon Swirl Quick Bread Recipe

Like its name, this cinnamon swirl quick bread is quick to make and calls for basic pantry ingredients. When it comes to baking, quick bread is an easy option with flavorful no-fail results. This cinnamon swirl quick bread recipe will satisfy cravings for a sweet treat and is a great go-to breakfast. If you want a warm on-the-go breakfast, wrap the whole loaf of bread in foil and place it in the oven at 300 degrees for 8-10 minutes. Top a slice of warm cinnamon bread with butter or cream cheese. Cinnamon quick bread makes the best french toast, if you have any leftovers. Cinnamon bread goes fast in my house. I have to make two loaves if I want to make french toast the following day. This cinnamon bread recipe can be doubled to make two loaves.



Can I use this recipe to make cinnamon swirl muffins?

Yes! You can absolutely use this cinnamon quick bread recipe to make muffins. Muffins are easier to handle for an on-the-go breakfast or snack. To make cinnamon muffins, line a muffin pan with liners. Spoon the batter into the liner filling it halfway. Sprinkle a heaping spoonful of the brown sugar and cinnamon mixture, top with more batter, and sprinkle more brown sugar and cinnamon mixture on the top. 


Bake at 375 degrees for 20-25 minutes. Baking time depends on how large you make the muffins. Be sure to check the muffins in 20 minutes.

How do I know if my quick bread is baked thoroughly? 

Poke a toothpick in the center of the bread and remove it. If the toothpick comes out clean the bread is done. This will work for most baked goods.

 

Why is my quick bread batter too thick?

Overly thick batter is a common issue during baking. A very thick batter is most likely caused by too much flour. When measuring flour for baking don't scoop the flour from the bag/ container with the measuring cup. Scooping the flour causes the flour to pack into the measuring cup resulting in too much flour. You could end up with almost fifty percent more flour than the recipe calls for. Never pack the flour into the measuring cup.


How to properly measure flour

Spoon and level! For an accurate measurement of flour use a spoon to spoon the flour into the measuring cup. After you've spooned the flour into the measuring cup use the back of a knife to level off the top of the measuring cup.



TIPS

When you're making a quick bread or muffin, you don't want to over-mix the batter. Over-mixing the batter will cause the quick bread to become dry and tuff. It's okay to have some lumps of flour. Mix the wet and dry ingredients until just combined for a moist, and airy quick bread. 




Ingredients for cinnamon swirl quick bread 

2 cups all-purpose flour

¾  cup sugar 

4 teaspoons baking powder

1 teaspoon cinnamon

1 teaspoon salt

1 cup milk

¼  cup vegetable oil

2 eggs 

2 teaspoons vanilla



Ingredients for the cinnamon and brown sugar swirl

½ cup brown sugar

3 teaspoon cinnamon


How to Make Cinnamon Swirl Quick Bread

1. Preheat the oven to 350 degrees and grease a 9x5 loaf pan. 

2. Prepare the cinnamon sugar mixture by combining ½ cup of brown sugar and 3 teaspoons of cinnamon and set aside. 

3. Whisk together the flour, sugar, salt, one teaspoon of cinnamon, and baking powder.

4. In a separate bowl combine the milk, eggs, and oil. Add the wet ingredients to the dry ingredients and stir until just combined. Don't over-mix.


Layer batter- sugar mixture- batter


5. Pour half of the batter into the loaf pan. Sprinkle half of the cinnamon sugar mixture on the batter. Top with the other half of the batter then the remaining cinnamon sugar on top. 

6. Using a knife gently run it through the batter in a swirl motion. 

7. Bake for 55-60 minutes. Test with a toothpick to see if the cinnamon bread is done by 

poking the toothpick in the center of the bread. If the toothpick comes out clean the bread is done.

8. Let the cinnamon swirl bread cool completely before slicing it. Slicing the bread when it's too hot can cause the bread to sink in the middle.
