Easy Pineapple Poke Cake Recipe

This delicious and easy pineapple poke cake recipe uses a box of cake mix and has creamy pudding in every bite.

A few of our favorite things, box cake mix, vanilla pudding, pineapple, and Cool Whip bring a creamy and delightful summer dessert. 

What is a poke cake?

Poke cake has been around since the 1970s. I couldn't find an exact date online but I sure do remember poke cake from my childhood.  A box of vanilla cake mix and colorful, flavorful Jell-O made an easy, fun dessert. A poke cake recipe calls for holes to be poked into a baked cake using a wooden spoon, or screwer, followed by pouring liquid Jell-O or non-set pudding over the cake. The liquid soaks into the cake and brings an incredibly moist and flavorful cake.

Fast forward to 2023 and there are many variations of poke cake like this pineapple poke cake recipe. This pineapple poke cake is a cool, creamy delightful dessert with tropical flavor and a burst of pudding in every bite. Pineapple poke cake with vanilla pudding is a perfect go-to dessert for the summer months.



When using pudding for poke cake be sure to make larger holes because the pudding mixture is thicker. The end of a wooden spoon will work great for pudding and chopsticks or a screwer for jello.

Make the pudding right before you are ready to use it. The pudding sets fast and once it's thickened it won't soak into the cake. If that happens don't worry the cake is just as delicious if the pudding is laying on top of the cake.

Plan ahead when making this pineapple poke cake recipe. It will need to be refrigerated for a few hours for the pudding to set.

You can omit the pineapple and just have a pudding poke cake. A pudding poke cake is just as delicious the pudding creates a super moist and flavorful cake on its own.

Insert a toothpick in the center of the cake. If the toothpick comes out clean the cake is done.

Store in the refrigerator 


1 box yellow cake mix

1 box vanilla instant pudding

1 can of sliced pineapple drained

1 container of Cool Whip thawed

2 cups milk for instant pudding

Water, eggs, and oil according to the cake mix package directions.

How to make a pineapple poke cake

Preheat the oven to 350 degrees and lightly grease a cake pan.

  • Line the bottom of the cake pan with drained pineapple slices.

  • Mix the yellow cake mix according to the package instructions and pour the batter over the pineapple slices. Bake the cake according to the package instructions.

  • Allow the cake to cool completely. Using the end of a wooden spoon poke 16 holes into the cake.

  • In a bowl whisk together the instant pudding and milk until smooth. Use the instant pudding quickly before it starts to set. Pour the pudding on top of the cake and spread it out with a spatula.

  • Top with Cool Whip and refrigerate for at least one-hour before serving. Keep refrigerated. I hope you enjoy this pineapple poke cake. It's a great dessert for the warm Summer months.
