How to Make No-Bake Peanut Butter Oat Bars

Step 1: In a medium mixing bowl, combine the quick oats, honey or maple syrup, vanilla, salt, and creamy peanut butter. Stir well until the oats are fully coated and the mixture thickens and sticks together. If it seems a bit dry or crumbly, add 1-2 teaspoons of water. The finished mixture should easily press together and hold its shape when firmly pressed into the pan or muffin liner.

Step 2: Transfer the mixture to a 9x9 baking pan, or use a larger pan for thinner bars. Press the mixture down firmly to help the bars set and keep their shape.


Step 3: Melt the chocolate. Add the dark chocolate chips and coconut oil to a microwave-safe bowl. Heat in 30-second intervals, stirring well between each round, until the dark chocolate is fully melted and smooth.


Step 4: Spoon the melted chocolate over the oat bars or individual muffin cups. Refrigerate the bars for 45 minutes. This quick chill sets the chocolate, allows the oat mixture to firm up, and keeps the layers neat.

How To Store Peanut Butter Oat Bars

Store the peanut butter oat bars in the refrigerator for up to 7 days. I like to place parchment paper between layers to prevent the bars from sticking together.


Can I freeze Peanut Butter Oat Bars?

Yes! Peanut butter oat bars freeze really well. Here's how:

  • Let them fully set

  • Wrap individual bars or place parchment between layers.

  • Store in an airtight container or freezer bag.

They'll keep in the freezer for up to 2 months. When you're ready to eat, let them thaw at room temperature for about 15-20 minutes, or enjoy them slightly frozen for a fudgy ice cream texture.
