Delicious sweet muffins sure are a treat, especially when they are made from scratch. This apple muffin recipe makes a flavorful, moist muffin with a yummy crumble topping. Applesauce is the sweetener for these muffins, reducing the need for added granulated sugar. You can certainly substitute apples for applesauce but I'm all about simplicity, and the applesauce is the secret ingredient for making the muffins moist. If you want to use apples instead of applesauce you will need ¾ cup of peeled, grated apples.
What ingredients do you need to make muffins?
Basic pantry ingredients are needed to make muffins. Flour, baking powder, salt, brown sugar, granulated sugar, ( granulated sugar depends on what flavor muffin you are making) eggs, milk, and vegetable oil.
Ingredients for Apple Cinnamon Muffins
2 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
1 teaspoon cinnamon
1 cup of applesauce or ¾ cup of grated apple
⅓ cup raisins (optional)
⅔ cup packed brown sugar
2 eggs well beaten
⅔ cup milk
¼ cup vegetable oil
1. Preheat the oven to 400 degrees. Lightly grease a muffin pan, or insert baking cups.
2. In a large bowl, combine flour, baking powder, salt, and cinnamon. Add the applesauce, raisins, and sugar. Stir until the ingredients are blended.
3. In a small bowl, combine the eggs, milk, and oil and stir until well blended. Make a well in the center of the dry ingredients. Pour the milk mixture in the center of the dry ingredients, using a fork, and stir the batter just until the dry ingredients are moistened. Do Not Over mix, the batter should be lumpy.
4. Spoon batter into the muffin pan, filling them ⅔ full. Bake until the muffins have risen and are a light golden brown for 15 to 20 minutes. Remove the muffins from the pan and place them on a wire cooling rack, or a cutting board to cool.
How to make crumb topping (optional)
Combine 6 tablespoons softened butter and ¼ cup brown sugar and beat with a hand mixer until light and fluffy. Add one cup of flour and ¼ teaspoon of salt. Mix with your hands until crumbly. Sprinkle the crumb topping over the muffin batter and bake.
Why are my muffins dry?
Overbaking will cause dry muffins, don't bake muffins for more than 20 minutes. Muffins will continue to bake if they are left in the hot pan, causing them to overcook. Remove your muffins from the pan as soon as they come out of the oven. Over-mixing will also cause dry muffins.

Place a tea towel at the bottom of the bread box, arrange the muffins inside, and cover them with another tea towel. It's best to avoid plastic wrap, as it tends to trap moisture.
