Throughout my life, my sweet Aunt Frances has been the one to bake a delicious pumpkin roll every Thanksgiving. This tradition has been a source of great anticipation for me, one that continues to this day. In my household, a freshly baked pumpkin roll never lingers for long, which led me to the decision that it was high time I acquired the skills to make it myself. Although this lovely, mouthwatering, moist, and slightly sweet dessert may appear difficult, the truth is quite the opposite. With just a bit of effort, you too can master the art of creating a homemade pumpkin roll.
If your only experience with pumpkin rolls has been the store-bought variety, I highly recommend giving this recipe a try. Homemade versions are undeniably superior in taste and quality.

What can I say about this traditional Fall dessert? Let's start with the perfect amount of pumpkin flavor and the creamy swirl made with cream cheese and powdered sugar. Pumpkin roll is ideal for Thanksgiving feasts or Fall gatherings where you wish to serve multiple people. You can precut it in advance, which not only offers convenience but a beautiful statement for your table.
The initial attempt at baking a pumpkin roll might not bring a flawless cream cheese swirl in the center, but that's alright since the taste will still be delicious. Improvement comes with practice, and the elegant swirl will become more refined as you gain experience. When I first attempted a pumpkin roll, I was pleasantly surprised at how uncomplicated it was. Although my cream cheese swirl lacked perfection, it was truly delicious.
This pumpkin roll recipe is done in two steps.
Step one is to make a cake with the pumpkin.
Step two is to make the filling.
You're going to make the cake, and while baking, you’ll make the filling. When the cake is done you will flip it over onto a kitchen towel and roll it up. Leave the cake rolled up and let it cool slightly. Once the cake is slightly cool, unroll it, spread the filling over the entire cake, and reroll it.
Important Tip
Beat the cake ingredients until they are just combined. Don't over-mix the batter.
What happens If I over-mix pumpkin roll batter? Over mixing the pumpkin roll batter can lead to a few undesirable outcomes:
1. Tough Texture: Excessive mixing can cause the development of gluten in the batter, resulting in a tougher and less tender cake.
2. Reduced Volume: Over mixing can deflate the air incorporated during the initial mixing, leading to a cake that may not rise properly, resulting in a denser roll.
To achieve a soft and fluffy pumpkin roll, it's important to mix the batter until just combined and no more.
What Is A Jelly Roll Pan?
Well, it's essentially a flat sheet pan with a 1-inch rim, very similar to a large cookie sheet. Jelly roll pans are purposefully built for creating sheet cakes, providing the sturdiness required for spreading fillings and creating perfect rolls. Additionally, they double as handy tools for baking cookies. Depending on the brand and quality, jelly roll pans can be found in a price range spanning from $10 to $30.

Ingredients For the cake
⅔ cup canned pumpkin
4 eggs
1 cup flour
1 tsp baking soda
½ tsp cinnamon
1 cup of sugar

Ingredients For The Filling
1 8oz brick of cream cheese softened at room temperature
1 cup powdered sugar
2 tbsp butter
1 tsp vanilla
Instructions for filling
Combine the softened cream cheese, powdered sugar, butter, and vanilla in a bowl and beat with a hand mixer until smooth.
Instructions For Cake
Start by beating the eggs, then beat in the sugar and pumpkin, beating until just combined.
Add the flour, baking soda, and cinnamon beating until the ingredients are just combined. Don't over-mix the batter. Over-mixing the batter will cause the cake to be tough and heavy. We want the cake to be soft light, and fluffy.
Spread the batter onto a parchment paper-lined jelly roll pan and bake at 350 for 13-15 minutes.
Important Tip Do not skip the parchment paper. This step will ensure the cake can be flipped onto the tea towel and not stick to the pan.
While the cake is baking beat the filling ingredients and then set it aside.
Generously sprinkle a tea towel with powdered sugar, just like the picture above. A tea towel is preferred due to its large size and lint-free quality. A large enough kitchen towel could work in a pinch.
When your cake is done turn it over onto your powdered towel and peel off the parchment paper, roll the cake in the towel. I have a short video clip on how to do that below. Now leave it alone until it cools slightly. The cake roll should be warm when you unroll it.
Unroll the cake, spread the filling along the entire cake, and carefully roll it back up. This time without the towel. Wrap the roll in plastic wrap or parchment and refrigerate for one to two hours. Once the pumpkin roll is chilled you can slice it.
