1 cup butter, softened

1 tsp baking powder

1 tsp baking soda

1/2 tsp cinnamon

1 egg

1 tsp vanilla

1 cup canned pumpkin

2 cups all-purpose flour

1 bag of semi- sweet chocolate chips



Instructions
  1. Preheat oven to 350 degrees. Line a cookie sheet with parchment paper and set aside.


  1. In a large bowl, beat 1 cup of softened butter with an electric mixer on medium to high speed for 30 seconds.


Add the granulated sugar, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice, and beat until well combined, occasionally scraping down the sides of the bowl.


Mix in the egg and 1 teaspoon of vanilla until fully incorporated, then beat in the pumpkin. Finally, mix in the flour until just combined. Don’t over-mix the batter once the flour is added.



  1. Drop dough by heaping teaspoons 2 inches apart on a cookie sheet. Bake in the preheated oven for 10 to 12 minutes or until the tops are set. Transfer cookies to a wire cooling rack and let them cool.
