Pumpkin pie filling is not recommended for this recipe.


How To Make Pumpkin Spice Muffins

Ingredients & Instructions

- 1 box of spice cake mix

- 1 can (15 ounces) of pumpkin

- 1/2 cup of butterscotch morsels

- 1/4 to 1/2 cup of water

- 1 teaspoon of vanilla extract


NOTE Begin with 1/4 cup of water, and if the batter appears too thick, incorporate an additional 1/4 cup. Occasionally, while preparing these pumpkin muffins, the batter may turn excessively thick, prompting the addition of extra water.


 

1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.


2. In a large mixing bowl, combine the spice cake mix, pumpkin, water and vanilla extract. Stir the ingredients together until well combined. The batter will be thick, but that's perfectly normal.


3. Gently fold in the butterscotch morsels. These sweet morsels will add a delightful contrast to the spiciness of the pumpkin.


4. Using a cookie scoop or a spoon, fill each muffin cup about 2/3 full with the batter. You should have enough batter for about 12 muffins.


5. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean. Be careful not to overbake, as this can make the muffins dry.
