Oh So Good Chocolate Muffin Recipe
This easy and delicious chocolate muffin recipe brings soft and creamy chocolate morsels with every bite and can be made without eggs. The cocoa powder in this muffin recipe brings a rich chocolate flavor everyone will love.
Whether you're craving chocolate or looking for an easy muffin recipe for breakfast or a snack these chocolate muffins are a great go-to and easy to make. Muffins are one of the easiest treats to bake with pantry ingredients you most likely have on hand. Do you have leftover blueberries or apple sauce? In just a few minutes you can whip up some delicious muffins. I will link my simple and delicious apple cinnamon muffin recipe at the end of this post.
For this chocolate muffin recipe, I replaced the eggs with two tablespoons of cream cheese, and the muffins came out delicious and moist.
What can I use as an egg substitute when baking?
Did you know eggs can be substituted with cream cheese, yogurt, and applesauce for baking? These substitutes work well for cakes, muffins, brownies, and quick bread.
¼ cup of yogurt = 1 egg
1-1 ½ tablespoons of cream cheese = 1 egg
1/4 cup applesauce = 1 egg
Ingredients
1 ¼ cups all-purpose flour
½ cup brown sugar
½ cup unsweetened cocoa powder
½ teaspoon salt
½ teaspoon baking powder
½ teaspoon baking soda
¾ cup milk at room temperature
⅓ cup vegetable or canola oil
2 tablespoons soft, room-temperature cream cheese or 2 eggs
2 teaspoons vanilla
¼ semi-sweet chocolate chips
Powdered sugar for dusting the top of the muffins after they are baked.
What Happens If I Overmix Muffin Batter? Over-mixing muffin batter will cause dry, tough muffins. Muffins are meant to be moist, light, and airy. Mix the dry and wet ingredients until just combined. Lumps are ok.
How To Keep Muffins Fresh? I have a couple of tips on how to keep your muffins fresh. You've probably noticed storing muffins in a Ziplock bag makes them wet and mushy. An easy solution, use a container with a lid. Place a paper towel on the bottom of the container, then the muffins, and a paper towel on top of the muffins. The paper towel will absorb the moisture that causes the muffins to become damp, mushy, and sticky. A good old-fashioned bread box can be used the same way to store muffins. Lay a tea towel on the bottom of the bread box, then the muffins, and a tea towel on top of the muffins. Avoid plastic wrap; it traps moisture.
How to make chocolate muffins
Preheat the oven to 375 degrees
Grease and lightly flour a muffin tin or line it with paper liners.
Mix the dry ingredients.
In a bowl, stir together the flour, brown sugar, cocoa powder, salt, baking powder, and baking soda.
Mix the wet ingredients
In another bowl, whisk together the milk, oil, cream cheese (or eggs), and vanilla until well blended.
NOTE The cream cheese may not dissolve entirely. That is ok, it will melt while the muffins bake.
Blend the ingredients.
Make a well in the middle of the dry ingredients, then pour the wet ingredients in the middle and stir to mix. When almost blended, add the semi-sweet chocolate chips, and mix until just combined. Some lumps are okay.
Bake the muffins.
Spoon the batter into the muffin tin about ⅔ full. Bake for 9-12 minutes, or until a toothpick inserted into the middle of the muffin comes out clean. When the muffins are done remove them from the pan to cool. Sprinkle powdered sugar on top of the muffins while they are still warm.
