Easy and Tasty Chicken Salad Recipe
This flavorful chicken salad recipe with grapes will quickly become a family favorite and makes the perfect go-to Summertime meal.
It is safe to say the warm weather is here to stay and Summer is fastly approaching. Hot days, busy schedules, and many outdoor activities call for quick and easy meals that won't heat up the kitchen. Chicken salad is one of my go-to Summertime meals and is delicious stuffed into pita bread. I like to use pita bread for chicken salad because it holds up well with the mayonnaise in this recipe and doesn't become soggy like traditional bread. Chicken salad stuffed in pita bread is also easy to pack for a picnic because the chicken salad stays in the pita bread nicely. This is a great on-the-go meal.
Cook once eat twice, what do I mean by that? If I'm grilling chicken for example I will cook a couple of extra chicken breasts and use the extra plus any leftovers to make chicken salad for dinner another night. This chicken salad recipe comes together quickly and everything is mixed in one bowl. You can also use a cooked rotisserie chicken from the store or if you have an Insta Pot you can cook a whole chicken in that. This chicken salad recipe calls for two cups of diced or shredded chicken. If you have a large family (over four people) I would double the recipe.

Homemade mayonnaise is quick and simple to make. A few years ago I saw a video on how to make homemade mayonnaise and honestly, I had no idea how easy it was to make. With a few simple ingredients, you can have homemade mayo to go with this delicious and hearty chicken salad recipe.
Important Tips For making Homemade Mayonnaise
1. Don't use extra virgin olive oil. Extra virgin olive oil has a bitter taste and doesn't blend into a creamy mayo like regular olive oil. Also keep in mind olive oil has a strong flavor. If you use olive oil it will have a strong olive oil taste. Vegetable oil, avocado oil, and sunflower oil work best.
2. The egg should be at room temperature.
3. This recipe makes one cup of mayonnaise and can be used for one week.
Homemade Mayonnaise Ingridents
1 cup vegetable or avocado oil
1 egg at room temperature
2 teaspoons lemon juice
½ teaspoon salt
½ teaspoon mustard
Immersion Blender Instructions
Mix the homemade mayo in a jar that's slightly bigger than the blender. The blades of the immersion blender must be in full contact with the mixture. The tight fit between the jar and blender is what allows the egg and oil to emulsify slowly, resulting in a thick creamy mayo. Place the egg, mustard, and lemon juice into the jar. Place the immersion blender into the jar with the blades touching the bottom and then turn the immersion blender on high. Blend for about one minute until the egg turns white and creamy. Add the oil slowly about 1/4 of a cup at a time. Continue by adding more oil and moving the blender up and down for an additional one to two minutes. Salt to taste.

Yes, you can make homemade mayo in a magic bullet. Follow the same instructions as the immersion blender.
I love how versatile this chicken salad recipe is. You can add to the chicken salad or swap the grapes for apples and add some pecans. Or one of my favorites is cherry tomatoes and cucumbers.

Homemade Chicken Salad Ingredients
2 cups of diced or shredded chicken
½ - ¾ cup of mayonnaise ( your preference if you like more mayo)
1 teaspoon mustard
½ cup of grapes sliced in half or quarters
2 green onions finely chopped
1 stalk of celery diced
Salt and pepper to taste
Instructions
1. Dice or shred the chicken.
2. Add mayo, mustard, salt, and pepper mixing well to combine.
3. Add grapes, celery, and green onions and lightly mix.
Serve on pita bread, traditional bread, wraps, crackers, or a bed of leaf lettuce.
