Note

Mix the French dressing and sour cream separately in a bowl. This mixture will serve as the dressing to pour over the taco pasta salad.

Mix 1 cup of French dressing with 1/2 cup of sour cream until smooth for the taco pasta salad dressing. Set aside. Once all the other ingredients are combined, thoroughly toss the pasta salad with this flavorful dressing mixture.




Ingredients

1 lb ground beef (cooked)

1 box rotini pasta (bow tie pasta will work too)

1 diced avocado

1 packet of taco seasoning

½ sweet pepper diced

3-4 chopped green onions

1 pint cherry tomatoes (halved)

2 cups shredded cheese

Shredded lettuce to your liking

1 cup French dressing

1/2 cup sour cream


As many Doritos as you want crushed or whole. We love Doritos so I used about half of a bag. I broke some up into small pieces to mix into the taco pasta salad and then the rest I left whole as a side.





Instructions


  1. Cook the pasta according to the package instructions. Drain and rinse with cold water to stop the cooking process. Set aside to cool.

  2. In a large skillet, cook the ground beef over medium heat until browned and cooked through. Drain any excess fat then add the taco seasoning and cook for an additional 2-3 minutes. Remove from heat and let cool slightly.

  3. In a small bowl, combine 1 cup of French dressing with 1/2 cup of sour cream. Mix until smooth, then set aside.

  4. Mix all the remaining ingredients, then thoroughly combine the pasta salad with the dressing mixture.

  5. Top with Doritos and serve the taco pasta salad cold or at room temperature and Enjoy!
